Maple Mustard Tofu Sandwich with Apples and Arugula

Flavor Focus: Sweet, tangy, bold

Sweet & Tangy Maple Mustard Tofu Sandwiches — All Flavor, No Nightshades

Going nightshade-free can feel challenging—especially when sandwiches often rely on tomato, peppers, or spicy condiments to bring the excitement. But trust me: bold doesn’t require nightshades.

This maple-mustard tofu is proof.

The combination of Dijon, maple syrup, and apple cider vinegar creates a punchy glaze that caramelizes beautifully onto tofu when baked or pan-seared. Layer that with crisp green apple slices and peppery arugula? Chef’s kiss.

This sandwich hits every note: sweet, tangy, crunchy, and creamy (if you add a smear of hummus). And because tofu absorbs flavor like a champ, the prep you do today keeps rewarding you all week long.

Nightshade-free eating can be vibrant and satisfying—you just need the right flavors leading the way. That’s exactly what this sandwich delivers.
