Easy Quick Chocolate Coconut Milk
This is an easy, quick, chocolate coconut milk recipe that does not require milking a bag! Most plant based vegan milk recipes require you to milk a bag to get the pulp out, which is time consuming, messy, and a little painful on your hands…at least they are on my hands. I have tried: almond milk, cashew milk, soy milk, and a few others. They all required me to use a milk bag or some type of cloth to forceably strain the pulp out. Repeated squeezing is not so easy when it the product is cold … or hot!
I prefer recipes that are quick and easy to make and recipes that don’t take a lot of time. I like recipes that makes the least amount of mess, and does not cause pain! And….dare I say lazy recipes? ha ha I am just kidding; however, If you are busy and pressed for time during this time of harvesting the bounty from our gardens like I am, then you will love this recipe for it not being another thing to put a huge drain on your time. This recipe could not be any quicker and easier to make. It has four simple ingredients: water, Medjool dates, cocoa powder, and coconut cream.
I have so many memories of making Kelsey chocolate milk from a squeeze bottle when she was a little girl…and over the years we have needed to make some changes to our diet for health reasons and for the animals. Kelsey still loves her chocolate milk. And I love to give her the things that she loves, especially when they are nourishing and health promoting. This chocolate milk is just that! This is a super quick way of making a healthy chocolate milk that she really enjoys drinking. I love this recipe as well, and you can leave the chocolate out if you want a sweet milk to use over dry cereals, in breads, for smoothies, make a “cheese” sauce, golden milk, to put in coffee and teas, and in so many other recipes.
You will want to exercise caution in choosing the coconut milk or cream that you use. There are so many out there that have additives, fillers, and thickeners, that I want to keep out of my family’s diet, because they aren’t necessary and more often than not, they are not health promoting either. So I advise that you read the ingredient list. The coconut milk I used was from Golden Star and it has only two ingredients: coconut milk and water. Truly, that is all that is needed. When I refrigerate it overnight, the cream rises to the top and the coconut water stays at the bottom, making it easy to scoop out the cream, as you can see in the video attached.
This recipe makes a thinner milk, but you can make it thicker by adding more dates, more coconut cream, or a teaspoon or so of Irish Moss Gel if you like a thicker consistency. Another alternative to this recipe is if you like spicy foods, perhaps you’d like to try adding a bit of hot pepper to the blender to spice things up a bit as I accidentally did in the video attached. That was quite a surprise, but it was very good, nonetheless. If you like strawberry milk, adding some strawberries to the blender instead of the chocolate would be a nice way to mix things up. Likewise, blueberry milk is a wonderful drink alternative as well. I am sure that you can think of a hundred different ways to use the base recipe for this milk!

- High Speed Blender
Ingredients
- 2 Tbsp Coconut Cream
- 5 Medjool Dates pitted
- 2 Tbsp Cocoa Powder
- 4 Cups Water
Instructions
- Add all ingredients to a high speed blender and blend until dates are incorporated.
- Use a strainer to strain out the date pulp.
- Refrigerate and Enjoy!
