In my epic quest for the perfect cabbage salad recipe, I felt like a culinary Indiana Jones. I was battling a horde of limp leaf-laden impostors. Each recipe I stumbled upon seemed to have been crafted by someone whose taste buds were on a permanent vacation. One called for a soul-crushing combination of raisins and mayonnaise that threatened to haunt my dreams. Another was a bizarre mix of cabbage with mystery “superfoods” that sounded more like alien rations than a refreshing salad. After going through numerous disappointments, I realized I was now a reluctant cabbage detective. I was searching for flavor in a place where none seemed to exist. Determined to uncover the tasty treasure buried beneath the mountains of sad, soggy greens, I finally triumphed!

I created this quick and easy recipe for high raw vegan Cabbage Salad. None of the online cabbage salad recipes appealed to me. At least not the ones I ran across. This however is delicious, and it could not be any easier to make! There is one vegetable to chop, the rest are open bag, measure and dump. A little pre-planning is required to thaw the frozen vegetables before mixing the ingredients. Alternatively, you can mix frozen vegetables into the salad if you are making it a day ahead. Always, you can skip the bagged frozen veggies for fresh ANY time, just mind the weight or measurements! This would also make a great dish to take to family gatherings!

This is a delicious light, but filling salad for lunch or as a side dish. It is high raw vegan. Make it the night before and don't even worry about pre-thawing the frozen veggies! You can cut the sodium almost in half if you replace half of each of the rice vinegars with apple cider vinegar.

  • 1 Very Large Mixing Bowl

Ingredients
  

  • 2 16 oz bag Tri-Color Coleslaw
  • 1 Large English Cucumber
  • 1 10 oz bag Frozen Seasoning Blend (onions, celery, red & green bell peppers, parsley) Thawed
  • 2 Cups Frozen Yellow Sweet Corn thawed
  • 2 Cups Frozen Green Peas thawed
  • 4 Tbsp Tbsp Mizkan Seasoned Rice Vinegar
  • 4 Tbsp Tbsp Mizkan Toasted Sesame Flavored Rice Vinegar
  • 3 Tbsp Dried Dill Weed
  • 1/2 Tbsp Tbsp fresh cracked pepper or to taste

  • Combine all ingredients, and enjoy!
