Why make a whole wheat bread that doesn’t have fat added through the use of oils?
Choosing not to use oils in cooking can promote better health due to the potential dangers associated with oil consumption. Oils, especially those high in saturated and trans fats, can damage the endothelial lining of arteries. This damage leads to atherosclerosis and increases the risk of cardiovascular diseases. This damage hampers blood flow and can elevate blood pressure, significantly impacting heart health. Furthermore, the consumption of certain oils is linked to insulin resistance, a precursor to type 2 diabetes. This condition occurs when the body’s cells become less responsive to insulin. This happens, usually due to a diet high in unhealthy fats. By avoiding oils, individuals can reduce inflammation. They can improve vascular function. This also enhances overall metabolic health. Together, these factors contribute to a lower risk of chronic diseases.
I wanted to reduce the amount of fats we consume for the reasons listed above. To achieve this, I used a recipe that came with my Zojirushi machine for making whole wheat sandwich bread. I altered it significantly to make it vegan and fat-free. This is my version of that recipe. This recipe can be used without the Zojirushi machine. You may want to keep your hands moist to reduce sticking that occurs without the oil. Alternatively, you can keep your hands floured until the dough ball is well formed. Go ahead, Experiment! Play with that dough!
The Whole Wheat Bread Disaster: A First-Time Baker’s Hilarious Fail
One day Angel decided to bake whole wheat bread for the first time. She imagined herself pulling a perfectly golden loaf out of the oven. It would fill her kitchen with the warm, comforting aroma of fresh-baked bread. She had seen enough cooking shows to believe it would be a breeze—just mix, knead, and bake. How hard could it be?
She followed the recipe measuring out the flour, and kneading the dough with enthusiasm. It felt tougher than she expected. She shrugged it off, thinking, Maybe whole wheat dough is just supposed to feel like a brick. She let it “rise.” In truth, it sat there stubbornly like a lump of clay. Then she popped it into the oven with high hopes.
An hour later, she pulled out what could only be described as a whole wheat boulder. It was dense, heavy, and completely unyielding. Determined to stay positive, Angel tried slicing it, but the knife barely made a dent. When her husband came home, she jokingly suggested using it as a doorstop. He took one look at it, tapped it on the counter—producing a loud thud—and agreed.
Angel later realized she had forgotten to add the yeast, which explained the lack of rise. She learned an important lesson. Whole wheat bread takes patience. It also requires maybe a little less confidence in those cooking shows and more attention to the ingredients!
I hope you enjoyed that short story, and now for some hints about this whole wheat loaf bread recipe.
Please note that using other wheat berries is possible. You may need to adjust your leavening agent. Additionally, you may need more or less vital wheat gluten for structure depending on the grain. Again, Play with it and find out what works for you! Enjoy this fat free vegan whole wheat bread recipe!!
***In the video, I used 2 Tablespoons of yeast. You should NOT need to use that much if you have a good yeast. Mine was almost dead. The amount used in the recipe below is the correct amount for live yeast. A little tip about the yeast: it keeps longer when stored in the fridge.
****The quantity of some of the ingredients in this recipe have been changed since I recorded the video. This recipe turns out perfect loaves, buns, and rolls every time!
