My wonderful husband reminded me that I am not a quitter, and that I could figure out how to make an amazing mayonnaise that would not shoot my blood glucose up for days. And I DID!
What is better than a whole food, plant based, low fat mayonnaise? Is this exactly like the eggy fatty mayo? No. It is an excellent and healthy replacement, though.
Since going low fat to reverse insulin resistance, I don’t like that fatty, heavy oil mouth feel any more. This does have the same familiar taste, but without the unnecessary fat! This is the best wfpb mayonnaise replacement I have ever tried, hands down!
The Best Tofu Mayo
Ingredients
- 1 12 oz pkg silken firm tofu (drained) – It has to be silken! – It has to be silken!
- sea salt to taste (Optional)
- 1/4 tsp fresh cracked pepper
- 1 tbsp apple cider vinegar with the mother
- 1 tbsp mustard
- 1 tsp onion powder
- 1 tsp garlic powder
Instructions
- Combine all ingredients.
- Blend on high until completly smooth.
- Chill for at least 1 hour.
