Equipment

  • 1 Food Processor
  • 1 1 Gallon Glass Jar w Lid
  • 3 empty 320ml vinegar bottles with a screw on cap Preferable brown glass

Ingredients
  

  • 1 cup ginger root shredded
  • 1 cup horseradish shredded or 1 can of Bubbie’s Fermented Horseradish
  • 3 med onions shredded
  • 6 oz garlic shredded
  • 3 lemons sliced thin
  • 10 slices dehydrated astragalus root broken into ½” pieces (optional)
  • 5 habanero peppers shredded
  • 4 sprigs rosemary bruised and crushed
  • 1/2 c turmeric root shredded can substitute 1 Tbsp dehydrated ground turmeric
  • 5 fresh or dehydrated cayenne peppers chopped
  • 2 bunches fresh parsley finely chopped
  • 2 Tbsp Szechuan peppercorns crushed OR regular peppercorns crushed
  • 2 quarts Organic Apple Cider Vinegar approx
  • 1 quart local raw honey approx

Instructions
 

  • Put all the ingredients in a gallon jar, andpack it tight.
  • Pour apple cider vinegar over the ingredients inthe jar until the jar is ¾ full.
  • Top off the jar with fresh (local if you canfind it) RAW honey.
  • Once it has been shaken a few times, you may want to add more honey once everything has settled. Allow to ferment for one month. Tighten lid and shake once daily. Loosen lid about half a turn for fermentation.
  • When ferment is done, strain through a dedicated nut milk bag (works great)! WEAR GLOVES! Write the date on the jar and set it in a cool dark corner where you can see it every day to remind you to give it a gentle shake.

*NOTES: I use a food processor to shred everything. This makes it quick and easy to get this in the jar and started fermenting. I keep a jar fermenting all year, because this is so effective! Where possible, use fresh herbs and ingredients; if fresh herbs cannot be found, you can use the dried equivalent. Use parchment paper to prevent acid from touching metal lids. Store in a cool dark place. I love to reuse amber colored vinegar bottles to store the strained liquid! DO not heat!
Every ingredient adds properties to this elixir. BUT all ingredients are not readily available all year long. If you don’t have all the ingredients, use as many as you can find.
