This is a nice mellow sweet BBQ Sauce that packs a powerful punch in flavor with just a hint of heat to spice things up. You may be surprised at my two secret ingredients: cinnamon and clove. These bring a really nice layer of flavor that is very satisfying to the palate.
2largered, yellow, or orange sweet bell pepperspureed
2largeonions (any variety)pureed
1bulbpeeled garlicpureed
1/4cupapple cider vinegar
1 cupseasoned rice vinegar
2cupbalsamic vinegar
1cupchili peppers fresh or dehydrated wholepureed
SPICE & SEASONING
4 tspsalt
1/4 cuponion powder
1/4cupgarlic powder
2 Tbspmustard powder
2 Tbspcelery seed powder
1Tbspallspice powder
1 1/2cupmolasses unsulfered
4 cupcane sugar
2 Tbspcloves ground
1/4cupcinnamon ground
1/4cupcoconut aminos
1/4 cuphot sauce of your choice
Instructions
Combine liquid ingredients and bring to a rolling boil.
Reduce heat to soft boil is achieved, and boil until reduced by half, approximately 1 hour.
Add spices and seasonings.
Bring back to a rolling boil and cook stirring frequently for about 10 minutes. You can cook it longer if you want to caramelize the sugar more or if you want it to be thicker.
You can strain it through a colander before filling your jars if you want if to have a smoother consistency, but this is not necessary if you love a thick, slightly chunky BBQ Sauce.
Can leaving a 1/2" head space and water bath process for 20 minutes.
