Simply mix the dry ingredients, stir in applesauce for a cookie-dough consistency, then bake until golden. In a large bowl combine all the ingredients except applesauce. Mix well. Then add applesauce and stir in until cookie dough consistency.
Scoop out cookie dough onto a baking sheet covered in parchment paper using 2 Tablespoons of cookie dough for each cookie. Be sure to leave about 1 inch between cookie, and press down cookies so they are somewhat flat and round.
Bake for 15-20 minutes. Cookies are done when they are golden brown.
Remove from oven and allow to cool for about 10 minutes.
